I have always been salty and less for sweets and last October I stopped eating any refined sugar at all. It's funny how true the old saying "you always want what you can't have." truly is because lately I've been craving sweetness every night.
When I was in college and on a college budget and before I went to culinary school, I used to make these little turnovers for my friends. They are incredibly simple, light and easy. It's the perfect 2-bite sweet that won't leave like you feeling like you have a sugar hangover after you eat one. I decided to make these tonight. Sweet ending to a salty day.
Banana & Honey Turnovers
1 large banana, thinly sliced
1/2 tsp cinnamon
1 tbsp raw honey, plus extra for drizzling
Freshly grated nutmeg
12 3 x 4 sheets of cut phyllo
Preheat oven to 400. Cook filling ingredients (spices, banana + honey) over medium heat until a syrup forms and bananas are coated. Create six squares by layering two squares together. Place hot filling on half of each phyllo square. Fold into triangles. Brush with coconut oil. Bake until golden. Drizzle with honey.
