Quick one pot dinners can be not only easy and time-saving for busy people, but also can create food that is not only healthy and satisfying, but also intense with flavor.  I created this one pot fish dish for Le Creuset.  Instead of using kale, I decided to go with peppery collards. I created a chili lime broth to balance the flavors and give this dish a subtle spicy sweet kick.
