Grilled Zucchini & Basil Spread

I think one of the most challening things to eating healthy is finding quick healthy snacks that are different that usual hummus, veggies and fruit.  I love the flavor in grilled veggies and decided to create a few simple, healthy spreads that are easy to make and full of layered flavors. This zucchini spread is creamy and bright with a touch of herb and spice.

Grilled Zucchini & Basil Spread

serves 4


4 zucchini, washed, sliced in halves

3 tbsp olive oil, divided 

1/2 cup chopped basil

1 tbsp freshly squeezed lemon juice

1 small habenero pepper, seeded and thinly sliced

sea salt

ground pepper

pita bread or lavash, grilled



Brush both side with 1 tbsp. olive oil and season with salt and pepper. Grill zucchini using a grill or grill pan approximately 4-5 minutes per side until zucchini is tender. Line a sheetpan with paper towels and allow zucchni to sit for 10 minutes to release some of it's water. While this isn't a necessary step, it will make a thicker spread. 

In a Vitamix or blender working in batches, blend grilled zucchini, adding 1 tbsp. olive oil, lemon juice and basil in last batch. Blend until smooth. Place in dish, drizzle with olive oil, season with salt and pepper and garnish ith habenero. Serve with grilled pita bread or lavash.
