Mango & Coconut Smoothie

 

One of my favorite things to make for breakfast is smoothies. There are many of us that aren't hungry for a full meal early in the mornings and smooothies are a good way to get the energy and nutrients we need to start the day.  I like testing my creative prowess with different flavor combinations with things like fruits that are powerful antioxidants such as cherries and blueberries, spices with health benefits (think cinamon and turmeric), cold brew, matcha, a splash of maple syrup, avocado, greens and healthy nut butters.  This am I made one of my favorite smoothies… Mango & Coconut. It is like drinking a tropical island escape… and an ocean blue is just what this smoothie needs to complete the beachy escape vibe. 

 

 

Mango & Coconut Smoothie

serves one

Ingredients: 

1 scoop of your favorite superfood powder 

1 scoop Collagen (I used Vital Proteins)

1 tbsp MCT Oil (I used Bulletproof)

1/2 cup Frozen Mango

1/2 cup Frozen Coconut Chunks

A Handful of Ice

25 oz Unsweetened Almond Milk (I used Califia Farms)

Method:

Combine all ingredients in a Vitamix or blender.  Blend until Smooth.  Serve cold.
