Grilled Bluefish with Coconut Oil, Lemon, & Herbs

I love to grill whole fish.  They are incredibly simple to prepare and can be stuffed with things like with citrus, salts and fresh herbs which will help infuse them with lots of brightness and flavor on the grill. Grilled whole fish make such a beautiful and dramatic presentation and are often my go-to main for easy gatherings with family and friends.

Grilled Bluefish with Coconut Oil, Lemon, & Herbs

Ingredients:

3 whole bluefish (approximately 15 inches each), cleaned and scaled

3-4 medium lemons, sliced

1 bunch fresh cilantro

1/2 bunch fresh italian flat-leaf parsley

6 tbsp coconut oil

sea salt

freshly ground black pepper

Method: 

Heat grill to medium-high heat. Stuff fish with lemon and herbs. Coat fish on both sides with coconut oil. Season with sea salt and pepper.  Place fish on the grill and cook approximately 10 minutes on one side and then flip to the other side, cooking an additional 10 minutes.  

Note: Fish will easily release from the grill when it is ready to flip.  

Serve fish immediately on a platter garnished with additional herbs, squeezed lemon juice, sea salt and pepper.
